On Nancy
Nancy is the person who suggests the swim. In February. Outdoors. Golden blonde, worn long. Eyes a bright, unclouded blue. 170 cm, curvy, with a complexion that always looks newly back from somewhere warm. Her laugh reaches the back of a restaurant without ever being loud. Evening style is simple and sunny: a fitted dress in a clear colour, bare legs, gold sandals when the weather allows and occasionally when it does not. She raises the temperature of a room by a degree or two simply by sitting in it.
Sunny, energetic, completely easygoing. Early thirties. English with warmth and a ready laugh. She swims most mornings at an open-air pool, whatever the season, and describes the cold with real relish. Road trips are her holiday of choice: a hired car, a coast road, no fixed plan and a paper map she refuses to fold correctly. Sushi is her one true extravagance, eaten in more cities than she can list. She once drove a Scottish coast road in a borrowed convertible, roof down, in steady rain, and calls it the best week of her life.
For an evening in Mayfair she heads to Nobu on Berkeley Street, busy and glossy, and asks for seats close to the sushi chefs so she can watch the knife work. She orders confidently, shares everything and will talk you into the one dish you were unsure about. Usually it becomes your favourite.
Covent Garden is home, and Mayfair is where she is most often introduced. From £600 an hour, full ladder on rates. Tell Octavia the hotel and the hour through booking. Late finishes are no trouble at all.
// Octavia's noteNancy is relaxed about timing and wonderful with first-time guests. Two hours at £1,100 covers dinner on Berkeley Street; add an hour if the conversation is going well, which it usually is.

As Nancy keeps it
Nancy turns up carrying a good day with her, and fully intends to hand some of it over. She greets you warmly, asks where you are staying and whether the pool is any good, and then describes the coldest swim of her life in vivid detail. Dinner is lively and generous. She likes to sit where the action is, beside the chefs or the open kitchen, and treats the menu as a shared adventure rather than a list of decisions. Stories arrive easily: a Portuguese coast road with no petrol for eighty miles, a lido in January skinned with ice. She listens as well as she talks. Bright and uncomplicated from start to finish, the evening leaves you in a better mood than it found you.
Three questions for Nancy
A January morning with a thin skin of ice on the pool. Three minutes, then the best cup of tea of my life.
A coast road, a car with a decent radio and no hotel booked for the second night. The best places are the ones you find by accident.
I ask what came in this morning and let the chef decide the rest. Trusting the person with the knife is half the pleasure.
