Hand Bianka a wine list and three questions come back before any answer. What are you eating? What did you drink last night? How late do you mean to stay? Then she decides, and the decision is usually the correct one.

165 cm, curvy, light brown hair worn long with ends the summer has bleached, and hazel eyes that shift shade under candlelight. Her wardrobe is found rather than bought: a silk blouse from a Chelsea dealer, a structured bag with a brass clasp, a belted coat older than she is. Everything fits as if it had been expecting her all along.

Warm in the old-fashioned sense, she attends to small things, a draught from the door, a glass running low, the anecdote you began and abandoned. Early twenties; her English is soft and never rushed. Sundays are for cooking, Italian and slow, a sauce left for hours, pasta rolled by hand. The rest of the week she tastes wine properly, notebook open, and reads auction catalogues of old clothes for fun.

In St James's she starts at Berry Bros. and Rudd on St James's Street, where the floorboards slope and the antique weighing scales still stand, then walks the few minutes to Franco's on Jermyn Street for supper. She orders simply. She asks the waiter what the kitchen is proud of tonight, and she actually listens.

As Bianka keeps it

A question arrives before any greeting: red or white, and why? Bianka prefers to open with a single glass at your hotel bar, tasted slowly and discussed a little, and only then the short walk to Jermyn Street. At table she is at her most observant, clocking what you order and what you almost ordered, and quietly steering the second course towards the dish you really wanted. Talk moves from Sicilian grapes to a silk scarf rescued from a Chelsea stall to the risotto she refuses to hurry for anybody. Nothing about the night is loud, and nothing is hurried either. When the coffee lands the hours have gone somewhere pleasant, and the stroll back past lit shop windows feels like one more course.
