On Laura

A map of northern Italy hangs on Laura's wall, pencilled with every village she has slept in and a handful she still means to reach. 169 cm; athletic. Light brown hair, long, holding the summer well into autumn. Green eyes that look outdoors even across a dining table. For evening she chooses soft tailoring, a cream blouse, wide trousers, a good coat, and walks in heels with the balance of someone who rides every week.

Adventurous and warm, with an energy that lifts a table without commandeering it. Mid twenties. English speaking. Horses are her constant: early hacks in Hyde Park, longer rides in the country whenever she can escape. Winter means skiing, as much as the calendar allows, and she describes a good descent so exactly that you feel the cold on your cheeks. She packs light, reads maps properly and is never late for a train. Luggage, in her opinion, should fit under one arm.

Near Dover Street she likes Murano on Queen Street, a calm Italian dining room in Mayfair, where she orders like a guest of the house and asks after dishes she remembers from Piedmont. She will talk you through the menu if you want, or say nothing and simply choose well. Either way, the risotto arrives exactly as it should, and she notices if it does not.

Laura is based in Paddington, a short cab ride from Dover Street. She is also a natural travelling companion, and weekends start from £6,000 while an hour in town is £600; both appear on rates. Octavia arranges the details through booking.

As Laura keeps it

Colour in her cheeks, a scarf half unwound: Laura looks as though she walked here, and quite possibly did. She likes an early table so nothing feels rushed, and she opens by asking where you have been lately and where you would go tomorrow if nothing stood in the way. The conversation is generous and practical at once. A hotel in Lucca, a run above Cortina, a stable outside Windsor: she will recommend all three and write them on the back of the menu if asked. Dinner is Italian and relaxed, the kind of room where nobody minds a second bread basket. She laughs easily, eats with pleasure, never lets a silence settle. Before dessert you catch yourself planning a trip, and wondering whether she might come.

That nerves travel down the reins. If you are tense, the horse knows first. A dinner table works much the same way, only with better wine.

A silk scarf, a paperback and shoes I can walk in all day. Everything else can be bought on arrival.

Mountains in winter, lakes in summer, a long lunch in either. Choosing only one seems a waste of a perfectly good year.
